Buraczki (Beet Salad)

Easter Table: Buraczki in Center (c)2000 AHGunkel



Grate or finely chop canned or fresh cooked beets. Combine beets, lemon juice, sugar and salt and toss lightly. Chopped green onion may be added. Garnish with parsley.

Some prefer to mix with vinegar, tasting for sweet/sour balance.

2 cans or 4 fresh cooked beets
Juice of 1/2 lemon
1/2 t. salt
1 T. sugar
1 green onion (optional)
